Why Japanese Rice Is Special
Japanese short-grain rice (japonica) is stickier, sweeter, and more aromatic than long-grain varieties. The difference is immediately obvious โ it's why sushi tastes different outside Japan.
Top Varieties
Koshihikari
Japan's most premium rice. Grown in Niigata Prefecture. Sweet flavor, perfect stickiness, glossy appearance. The gold standard. ยฅ2,000-3,000 for 5kg.
Akitakomachi
From Akita Prefecture. Slightly less sticky than Koshihikari but excellent flavor. Great value. ยฅ1,500-2,500 for 5kg.
Hitomebore
From Miyagi Prefecture. Well-balanced flavor and texture. Good for everyday cooking. ยฅ1,200-2,000 for 5kg.
Cooking Tips
- Wash rice 3-4 times until water runs mostly clear
- Soak for 30 minutes before cooking (improves texture)
- Use a 1:1.1 rice-to-water ratio for Japanese rice
- Let it steam for 10 minutes after cooking before opening the lid
